Kale Salad with Maple Vinaigrette

INGREDIENTS

Maple Dijon vinaigrette:

1/3 cup olive oil

3 tbsp apple cider vinegar

1 1/2 tsp Dijon mustard

2 tsp maple syrup

Salt and pepper to taste

Salad:

1 bunch kale, washed, removed from ribs and chopped

1 head lettuce washed and cut into bite sized pieces

1 radish, washed and shaved

2 carrots, peeled, chopped and roasted

1/4 cup pumpkin seeds

1/4 cup crumbled goat cheese or shaved Parmesan

1/4 cup roasted (or candied) chopped walnuts

directions

To make the vinaigrette, put all ingredients in the blender or with an immersion blender and blend to emulsify. Add salt and pepper to desired tastes. 

In a serving bowl, toss the kale, lettuce, radish and carrots with the vinaigrette then top with the pumpkin seeds, cheese and walnuts. Serve immediately. Good as a side dish served with a protein or by itself as a light meal.
