Kohlrabi Salad

Prep Time 10 minutes | Cook Time 5 minutes

INGREDIENTS

2 Apples (gala, Honeycrisp or pink lady), washed and sliced thinly on a mandolin, skin on

2 small Kohlrabi, peeled and sliced thinly on a mandolin

3-4 small Turnips, peeled and sliced thinly on a mandolin

Handful of Mint Leaves, approximately 8-10 leaves, chiffonade

Hazelnut, toasted and roughly chopped

Zest and Juice of 1 lemon

2 green onions, sliced thinly

1 garlic clove, microplaned

1 ½ tbsp olive oil

Salt and pepper to taste

Toss everything together in a bowl and stir to coat all the vegetables in the developing vinaigrette.  Is it best to serve shortly after mixing while the vegetables are fresh and crispy.  Can be served with grilled chicken or alongside a porkchop or tenderloin.
