Roasted Cabbage with Yogurt Sauce

Prep Time 10 minutes | Cook Time 40 minutes

INGREDIENTS

1 head of cabbage, cut into 6 wedges

2 tbsp olive oil

salt and pepper to taste

1 tsp za'atar spice

1 tbsp chili crunch 

1 tbsp finely chopped parsley

Yogurt Sauce

3 tbsp Greek yogurt

½ tbsp whole grain mustard

1 tbsp lemon juice

2 cloves garlic, grated on a microplane

1 tbsp olive oil

salt and pepper to taste

On a parchment lined sheet pan, place the cabbage wedges spaced out and not overlapping. 

Mix the olive oil, za'atar spice, chili crunch, salt and pepper and olive oil and mix to combine.  Drizzle this mixture evenly over the cabbage and roast for 35-40 minutes, checking frequently.  You want the cabbage to brown but not get too dark.

While the cabbage is in the oven, mix the yogurt sauce ingredients together.

When the cabbage is roasted, allow to cool slightly before serving.  To serve, spread and thing layer of the yogurt sauce along the bottom of the plate, place the roasted cabbage on top and drizzle the top with any remaining yogurt sauce, extra chili crisp and any remaining chopped parsley you have.  Would be great with a grilled or roasted chicken breast or white fish.
