Spicy Beef Stir Fry

INGREDIENTS

1 1/2 lb beef tenderloin or sirloin steak, cut into strips

1 egg, whisked

4 tbsp cornstarch

1/4 tsp salt

1/4 tsp black pepper

4 tbsp neutral oil, split

1 tsp minced ginger

3 garlic cloves, minced

2 tbsp rice vinegar

3 tbsp soy sauce

2 tbsp tomato paste

3 tbsp sugar

1 onion, sliced

2 bell peppers, sliced

1 carrot, thinly sliced

1 bok choy, scliced

directions

Mix egg, cornstarch, salt, pepper, and 2 tbsp neutral oil in a bowl. Coat beef strips in egg mixture.

Heat the rest of the oil in a sauce pan. Sear the steak pieces in batches until lightly browned on the outside. Set aside.

In the saute pan, saute onions until translucent. Add ginger and garlic until fragrant.

Add jalapeno, bell peppers, bok choy, and sliced carrots, making sure to stir constantly.

Add rice vinegar, soy sauce, tomato paste and sugar, and stir to coat and create a sauce. Simmer for two minutes and add steak back to pan. Simmer an additional 2 minutes.

Serve over rice and garnish with sliced green onions.
