Nourishing Quinoa Salad

Prep Time 30 minutes | Cook Time 20 minutes | Serves 4

INGREDIENTS

Salad

2 cups of quinoa

1 small onion

1 handful of arugula

2 cups chopped kale

1 cup chopped squash

1 cup shredded carrots

½ cup feta cheese cubed 

 ½ cup chopped fresh herbs such as mint, parsley, cilantro

¼ cup dried cranberries

1 tbsp salt

1 tsp black pepper

1 clove of garlic finely chopped

Dressing

½ cup olive oil

¼ cup lemon juice

1 lemon zested

1 tbsp Dejon mustard 

salt and pepper to taste

Preparing the Quinoa

  • Put quinoa in a pot and cover with enough water to cover the quinoa by one inch.

  • Add half a tablespoon of salt and stir. Bring the pot to a boil and cover. 

  • Once the quinoa expands and becomes translucent, it's done. This should take about 15 minutes.

  • Take out of the pot, add the chopped garlic and spread the quinoa on a platter to cool down.


Preparing the dressing

  • mix lemon juice, zest and mustard.

  • Whisk in the oil until it thickens.

  • Season with salt and pepper to taste


Plating your Dish

  • To finish the salad, mix all the ingredients together and toss in the salad dressing.
