Nourishing Quinoa Salad
Prep Time 30 minutes | Cook Time 20 minutes | Serves 4
INGREDIENTS
Salad
2 cups of quinoa
1 small onion
1 handful of arugula
2 cups chopped kale
1 cup chopped squash
1 cup shredded carrots
½ cup feta cheese cubed
½ cup chopped fresh herbs such as mint, parsley, cilantro
¼ cup dried cranberries
1 tbsp salt
1 tsp black pepper
1 clove of garlic finely chopped
Dressing
½ cup olive oil
¼ cup lemon juice
1 lemon zested
1 tbsp Dejon mustard
salt and pepper to taste

Preparing the Quinoa
Put quinoa in a pot and cover with enough water to cover the quinoa by one inch.
Add half a tablespoon of salt and stir. Bring the pot to a boil and cover.
Once the quinoa expands and becomes translucent, it's done. This should take about 15 minutes.
Take out of the pot, add the chopped garlic and spread the quinoa on a platter to cool down.
Preparing the dressing
mix lemon juice, zest and mustard.
Whisk in the oil until it thickens.
Season with salt and pepper to taste
Plating your Dish
To finish the salad, mix all the ingredients together and toss in the salad dressing.
