Kohlrabi Slaw
Prep Time 20 minutes | Serves 4
INGREDIENTS
1 kohlrabi, peeled and cut into matchsticks
1 cup shredded cabbage
1 cup daikon radish, julienned
1 carrot, peeled and shredded
1 apple julienned
1/2 cup scallions, thinly sliced
1/4 cup parsley, finely chopped
2 tsp celery seed
For the dressing:
1/2 cup mayonnaise or Greek yogurt
2 tbsp apple cider vinegar
2 tbsp lemon juice
2 tbsp Dijon mustard
1/4 tsp ground black pepper
Salt, to taste

In a mixing bowl combine the kohlrabi, cabbage, daikon, carrot, apple, scallions, parsley and celery seed and toss to mix. I
n another bowl whisk all dressing ingredients together. Mix the dressing over the slaw mix and allow to sit and marinate before serving, at least 20 minutes.
Good on the side of a pork tenderloin or for a crunchy topping for fish tacos.
