Sauteed Cabbage

Cabbage offers a natural sweetness, and when cooked over high heat, its sugars caramelize, bringing out a rich, flavorful taste. This recipe can be enjoyed as a side dish or a vegetarian main course. For a heartier meal, simply add pasta or gnocchi.


Serves 4 people | prep time 10 minutes |cooking time 15 minutes

  


Ingredients:

-       -       1 medium head of cabbage (cut into bite-sized or walnut-sized pieces)

-               2 tablespoons olive oil

-               1 tablespoon butter

-               1 teaspoon caraway seeds or cumin (optional)

-               ½ cup of bacon (cut into small cubes / optional)

-               ¼ cup fresh parsley chopped

-               Salt to taste

-               Freshly ground black pepper to taste

Instructions:

1.      Prepare the cabbage:

-               Remove the core and any tough outer leaves.

-               Cut the cabbage into bite-sized pieces.

2.      Render the bacon (optional):

-               If using bacon, place the cubed bacon in a large cast-iron skillet over medium heat.

-               Cook the bacon until rendered and crispy.

-               If using bacon, you can skip the olive oil or use less.

-               If you’re not using bacon, just start with the olive oil in the pan. 

3.      Sauté the cabbage: 

-               Add the cabbage to the pan in an even layer.

-               Let it cook undisturbed for a few minutes to allow the edges to caramelize.

-               If using, sprinkle in the caraway or cumin seeds.

-               Season with salt and freshly ground black pepper. 

-               Add the butter and cook the cabbage to your desired doneness, stirring occasionally. 

4.      Add the pasta (if using): 

-               If using pasta add the cooked pasta along with a ladle of cooking water to the pan.

-               Add another tablespoon of butter and mix together until an emulsion is formed. 

5.      Finish and serve:

-               Finish the dish with freshly chopped parsley and ground black pepper.

-               Some grated Parmesan cheese for the pasta works well too.
