Strawberry and Rosemary Spritz

Ingredients

-        1 cup fresh strawberries, hulled and sliced

-        4 sprigs of fresh rosemary

-        1/4 cup granulated sugar

-        1/4 cup water

-        1 bottle (750ml) prosecco or sparkling wine or lemonade for an alcohol free version

-        1 cup sparkling water or club soda

-        Ice cubes

-        Additional strawberries and rosemary sprigs for garnish

-        Lemon slices (optional)

DIRECTIONS

1.Prepare the Strawberry and Rosemary Syrup:

1.      In a small saucepan, combine the sliced strawberries, rosemary sprigs, sugar, and water.

2.      Place the saucepan over medium heat and bring the mixture to a simmer, stirring occasionally.

3.      Once the sugar has dissolved and the strawberries have softened, remove the saucepan from heat.

4.      Let the syrup cool completely, allowing the flavors to infuse, for about 15-20 minutes.

5.      Strain the syrup through a fine mesh sieve into a clean container, pressing down on the strawberries and rosemary to extract all the liquid. Discard the solids.

2. Assemble the Strawberry and Rosemary Spritz:

1.      In a large pitcher, combine the prepared strawberry and rosemary syrup with the prosecco or sparkling wine.

2.      Add the sparkling water or club soda to the pitcher and gently stir to combine.

3.      Taste the spritz and adjust sweetness if necessary by adding more syrup or sugar.

4.      Fill serving glasses with ice cubes.

5.      Pour the Strawberry and Rosemary Spritz into the glasses, leaving some space at the top.

6.      Garnish each glass with a strawberry slice, a sprig of rosemary, and optionally a lemon slice.

3. Serve:

1.      Serve immediately, allowing guests to enjoy the refreshing flavors of the spritz.

2.      Optionally, you can place extra bowls of sliced strawberries and rosemary sprigs on the table for guests to add to their drinks as desired.
