Kohlrabi and Apple Salad

Prep Time 20 minutes

INGREDIENTS

1 head of little gem

1 large kohlrabi

1 crisp apple

1 small shallot

1/2 cut hazelnuts or walnuts toasted

1/2 cup micro grated pecorino

1/4 cup fresh mint

1/4 cup Champagne Vinaigrette (1/2 cup olive oil, 1/4 cup champagne vinegar, 1 tsp mustard)

Salt to taste

Break the leaves of the little gem apart, wash and dry well. Keep whole.

Slice the kohlrabi with a mandolin to 1/8 inch slices.

Slice the apple to 1/8 inch slices.

Peel the shallot and using the mandolin, slice thinly.

In a large bowl, mix the little gem, kohlrabi, apple, mint and shallot. Toss with Champagne Vinaigrette. Season with salt. Top with toasted nuts and grated cheese. Enjoy!
