Flatbread with Green Garlic Butter
There’s nothing like warm garlic bread, but a crispy flatbread topped with fresh garlic butter made from this week’s green garlic is unbeatable. Make the butter ahead of time and store it in the fridge. Once you’ve mastered the flatbread technique, get creative with toppings. Try drizzling with olive oil, spreading burrata, and adding prosciutto and arugula. Or go for crème fraîche, smoked salmon, fresh dill, and grated horseradish. For something sweet, try fresh chèvre, grilled peaches, honey, and rosemary. Whatever topping you choose, they’ll be the perfect bite!

Ingredients:
For the flatbread:
- 2 cups all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- 2 tbsp olive oil (or melted butter)
- ¾ cup warm water
For the green garlic butter:
- ¼ cup unsalted butter (melted)
- 2-3 cloves garlic, finely minced
- 2 tbsp leaves of the green garlic, finely minced
- 2 tbsp fresh parsley finely chopped
- Pinch of sea salt (for sprinkling)
Instructions:
1. Prepare dough:
- In a bowl, mix flour, baking powder, and salt.
- Add olive oil and warm water. Stir until a dough forms.
- Knead for 2-3 minutes until soft and slightly sticky.
- Alternatively, use a kitchen machine or hand mixer to knead the dough.
- Let rest for 5 minutes.
2. Roll out flatbreads:
- Divide dough into 4-6 small balls.
- On a lightly floured surface, roll each ball into a thin circle (about 6-8 inches).
3. Cook the flatbreads:
- Heat a non-stick skillet or griddle over medium-high heat.
- Cook each flatbread for 2-3 minutes per side until golden and crispy.
- Flip once air bubbles form, then press gently for even cooking.
- Alternatively, the flatbreads can be cooked on a BBQ, which will add a smoky flavor.
4. Make the green garlic butter:
- In a small bowl, mix melted butter, minced garlic, and chopped herbs.
- If desired, blend the butter for smooth and vibrant green color.
- Brush each flatbread with the warm green garlic butter immediately after cooking.
5. Finish and serve:
- Sprinkle with a pinch of sea salt.
