Field Pea Salad

Prep Time 10 minutes | Cook Time 15 minutes

INGREDIENTS

2 cups field peas

1 bell pepper, chopped

1/2 red onion, chopped

1 cup kale, finely sliced

handful fresh dill or cilantro, chopped

3 tbsp LBN champagne vinaigrette, or similar

Blanch field peas. To blanch, bring a small pot of water to a boil. Cook peas for two minutes in boiling water and cool immediately in ice water. Drain well.

Combine peas with chopped vegetables and finish with herbs and dressing. Enjoy!
