Baba Ghanoush

INGREDIENTS
2 eggplant
1 clove garlic
1/4 cup olive oil
1/2 tahini
2 tbsp chopped parsley
zest and juice of one lemon
salt and pepper

Preheat the oven to 400 degrees Fahrenheit or prepare wood burning grill.
Cover a pan with parchment paper and roast whole eggplants for 20 minutes or until soft.
When eggplant is cool enough to handle, remove skins and seed pits and place in a large bowl.
Mince garlic and add to eggplant.
Using a fork, mash eggplant until smooth, but still retains some texture.
Slowly mix in lemon zest, lemon juice, olive oil, and tahini one at a time until well incorporated. Season with salt and pepper and taste. Add more lemon juice or tahini to your liking.
Finely chop parsley and mix into bowl.
Finish with olive oil and serve with crackers, bread, or crudite.
