Baba Ghanoush

INGREDIENTS

2 eggplant

1 clove garlic

1/4 cup olive oil

1/2 tahini

2 tbsp chopped parsley

zest and juice of one lemon

salt and pepper

  • Preheat the oven to 400 degrees Fahrenheit or prepare wood burning grill.

  • Cover a pan with parchment paper and roast whole eggplants for 20 minutes or until soft.

  • When eggplant is cool enough to handle, remove skins and seed pits and place in a large bowl.

  • Mince garlic and add to eggplant.

  • Using a fork, mash eggplant until smooth, but still retains some texture.

  • Slowly mix in lemon zest, lemon juice, olive oil, and tahini one at a time until well incorporated. Season with salt and pepper and taste. Add more lemon juice or tahini to your liking.

  • Finely chop parsley and mix into bowl.

  • Finish with olive oil and serve with crackers, bread, or crudite.
